Insurance hurdles

Using regenerative, sustainable and permaculture practices, we raise chicken to be sold at farmers markets and grocery stores. We will eventually have other livestock, but this was the easiest way to start. Recently we learned that not all of our “ducks are in a row” and that our insurance coverage was wrong. We are now having difficulty finding anyone in Central Illinois that will cover our operation. Are we going about this all wrong?
