Business entity selection

Hello! I am working with some farmers who each have their own entities but do some work together–growing and harvesting one crop on one farmer’s land to then take back and sell at all of their farms separately. They have no formal partnership but are interested in understanding the risks associated with this informal partnership and any steps they might take to mitigate such risk.
